Let me introduce you the Chicory Plant!
Chicory, with its stunning blue flowers, is hard to miss along roadsides and in overgrown fields. I was so excited to spot this last year and be able to identify it while traveling the west coast!
Originally native to Europe, this wildflower is now found throughout North America and much of the world. Like with honeybees though, which are also not native here, this fact is mostly overlooked because of the plant’s usefulness. The roots are commonly used as a caffeine-free coffee substitute and the nutrient packed leaves and buds can be pickled, cooked, or added to salads. Be sure to take time for a closer look at chicory as you study summer wildflowers!
